In an effort to reduce refined sweeteners like sugar, honey, and agave syrup in our home, this came to my rescue and has helped the family to transition without being miserable.  The key difference here is that we are still eating the entire date and thereby keeping the fiber.  There’s nothing added to it either, so there’s nothing refined, just a fruit who’s structure has been altered a little in a blender!

 

 

 

 

 

 

 

 

 

 

 

This straightforward little trick (it’s not really a ‘recipe’, is it?!) has really helped us make the necessary adjustments without sacrificing familiar flavors.  With so many ways that you can use it – stir it in to yoghurt, chia pudding, oatmeal, spread it on toast, or use it in any other recipes in place of sugar or syrup – and being so easy to make it quickly became a staple our fridge.

Instructions
  1. Cover the dates with water and leave to soak overnight.
  2. Drain off the excess water and add enough back to blend easily. You can always add back more water as needed but once you start blending, it's much harder to take it out!
  3. Blend the dates and water until smooth. Adjust the consistency with water as necessary
  4. Scrape everything in to a jar and store in the fridge.
Recipe Notes
  • This makes a reasonable amount but you can really make as much or as little as you like. The only thing to watch for is that if you try to use too few dates, the blender may not work well
  • If you do not have time to soak overnight, you can pour boiling water over the dates or place the dates and water in the microwave for 3 minutes instead.  Allow them to stand for about 30minutes until the water has cooled down and the dates have absorbed the water and are just starting to break down
  • You can use any un-blended date water in a smoothie, or drink it neat like my kids!
  • When substituting for sugar, I start out at about 1/2:1 (date paste:sugar) and adjust from there.  For syrup substitutions, it's closer to 1:1, but go cautiously depending on the recipe.
